Hey Alan what plants would you suggest for this? Cress? or is there something more exotic (prettier) that might work?

Anything that doesn't get really big I suppose.
Mustard or cress seed would be good, and you can eat it too. Even some small cheapie plug plants from your local supermarket - french marigolds, busy lizzies etc or even some of the small alpines & rockery plants. Just make sure it doesn't get waterlogged and can't dry out if the office gets too hot over a weekend or holiday.
What about a lettuce? You can eat the thing a leaf at a time as it grows.

Make a small ball of soil in the end of a stocking (fnarr, fnarr), mount it in an eggcup and plant some grass seeds where the 'hair' should be. You can draw a face on it and cut the 'hair' as it grows - entertains the kids - and cheesey, perhaps!!!!
